Homemade High Protein Peanut Butter Banana Overnight Oats, freshly made and ready to serve

High Protein Peanut Butter Banana Overnight Oats

The first batch I made was basically cement. I’d dumped the protein powder in last, right on top of the oats, and it clumped into chalky little balls that never dissolved overnight. Now the powder goes into the milk first and gets whisked smooth before a single oat touches the jar. Thirty seconds. That’s the whole fix.

Whey works best here, honestly. Plant powders soak up a lot more liquid, so if that’s what you’ve got, add an extra splash of milk or the oats set up stiff as a brick. I slice the banana in the morning, not the night before, because it turns brown and slimy sitting on top. I eat mine cold, standing at the counter, with black coffee.

These high protein peanut butter banana overnight oats take five minutes of meal prep. Stir, cover, sleep. Greek yogurt and whey turn the oats thick and spoonable, almost like pudding, with peanut butter running all the way through. They keep up to four days in the fridge, though the texture is best on days one and two.

Ingredients

  • 2 scoops vanilla protein powder (about 60 g, whey works best)
  • 1 1/2 cups unsweetened almond milk (or any milk, plus a splash to loosen)
  • 1 cup plain nonfat Greek yogurt
  • 2 tbsp creamy peanut butter
  • 1/2 tsp vanilla extract
  • 1/8 tsp fine salt
  • 1 cup old-fashioned rolled oats (not quick oats)
  • 2 tsp chia seeds
  • 1 large banana (sliced, for topping)

Equipment

  • Two 16-ounce jars with lids
  • Mixing bowl
  • Whisk

Method

  1. Pour the almond milk into a mixing bowl and add the protein powder. Whisk for about 30 seconds, until no dry pockets or lumps are left.
2 scoops vanilla protein powder, 1 1/2 cups unsweetened almond milk
  2. Add the Greek yogurt, peanut butter, vanilla and salt. Whisk until smooth and evenly tan, scraping the peanut butter off the whisk so it doesn't stay in one blob.
1 cup plain nonfat Greek yogurt, 2 tbsp creamy peanut butter, 1/2 tsp vanilla extract, 1/8 tsp fine salt
  3. Stir in the rolled oats and chia seeds with a spoon until every flake is coated. The mixture will look loose at this point, which is what you want.
1 cup old-fashioned rolled oats, 2 tsp chia seeds
  4. Divide the mixture between two jars, seal them and refrigerate for at least 4 hours, or overnight. The oats and chia absorb the liquid and set thick.
  5. Stir the oats well before eating and loosen with a splash of milk if they're too stiff. Slice the banana, arrange half the slices over each serving and eat cold.

Swap the peanut butter for 4 tbsp powdered peanut butter to save about 45 calories per serving. If you use a plant-based protein powder, add 2 to 4 extra tablespoons of milk.
