Crispy Almond Apricot Cake
Fresh apricots pressed into a ricotta-enriched batter make this cake worth every minute. The crumb stays moist from within — soft, faintly tangy where the fruit sinks in — while the top turns into something else entirely: a golden, shattery layer of sliced almonds baked under a thin egg-and-butter glaze. Two bakes, one pan, one very good result.
A splash of Grand Marnier in the batter is optional but it rounds out the apricot’s brightness without overpowering it. If you’d rather skip the liqueur, a half teaspoon of vanilla extract works just as well. Let the cake cool fully before unmolding — the springform releases cleanly once the crunch on top has set.

- Pour the batter into the prepared springform pan and spread it into an even layer. Arrange the quartered apricots over the surface, pressing them lightly so they sink just slightly into the batter.
