The one step that matters is whisking the eggs and sugar until they fall from the beater in a thick ribbon. Take the full five minutes. That trapped air is what lifts the cake, since there’s no gluten to hold it up. Serve it plain, toasted with a little butter, or with a spoonful of fresh berries.

- Combine the eggs and granulated sugar in the bowl of a stand mixer fitted with the whisk attachment, or use a hand mixer. Beat on medium-high speed for about 5 minutes, until the mixture turns pale, nearly doubles in volume, and falls from the beater in a thick, slow ribbon. - Stir in the vanilla extract with a few gentle turns of the spatula. Add the almond flour, baking powder, and salt all at once, then fold slowly with a rubber spatula, cutting down through the center and sweeping up around the sides.
