Easy Creamy Red Lentil Coconut Curry

  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 1/2 tsp curry powder
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cumin
  • 2 medium carrots (cut into very small dice; can substitute sweet potato, zucchini, or tomatoes)
  • 1 cup red lentils (rinsed; about 200 g)
  • 3/4 cup coconut milk (about 200 ml; from a can or small carton)
  • 3/4 cup vegetable broth (about 200 ml; or water — add more during cooking if needed)
  • 1 tbsp tomato paste
  • salt and mixed peppercorns (or black pepper, to taste)
  • 1-2 eggs (optional — cracked in at the end)
  • fresh parsley and cilantro (to garnish)

Method

  1. Heat the olive oil in a large skillet or saucepan over medium heat. Add the diced onion and minced garlic, and cook, stirring occasionally, for 3 to 4 minutes until the onion is soft and translucent.

  5. If using, create one or two small wells in the curry with the back of a spoon and crack an egg into each one. Cover the pan and cook for 2 to 3 minutes, until the whites are set but the yolks are still soft.
  6. Scatter fresh parsley and cilantro over the top and serve directly from the pan. Spoon over steamed rice or alongside warm flatbread.
