Easy Creamy Red Lentil Coconut Curry
Red lentils are one of those pantry staples that do more work than they get credit for. They break down quickly, absorb every spice around them, and pull a full meal together in under 30 minutes. This coconut curry leans into that — warm cumin, curry powder, and ginger build a fragrant base, while coconut milk brings the richness that makes the whole pot feel substantial.
Diced carrots add a little sweetness and texture, but the formula is flexible — sweet potato, zucchini, or tomatoes all work just as well. Crack one or two eggs directly into the pan at the end if you want extra protein without any fuss.

- Stir in the curry powder, ground ginger, and ground cumin. - If using, create one or two small wells in the curry with the back of a spoon and crack an egg into each one. Cover the pan and cook for 2 to 3 minutes, until the whites are set but the yolks are still soft.

made this tonight and my 7 year old actually finished his bowl. that never happens with curry so i’m calling this a win
been making this every other week since february. its so quick and the coconut milk makes it feel fancy but its really just throwing stuff in a pot
added some diced tomatoes because thats what i had and honestly it was even better. will definitely do that again
took it to work in a container and reheated it in the microwave at lunch. still tasted amazing the next day
