Ingredients
  

  • 2 medium potatoes (peeled and cut into small cubes)
  • 2 medium carrots (peeled and cut into small pieces)
  • 1/2 yellow onion (finely chopped)
  • 1 medium zucchini (cut into small pieces)
  • 2 cloves garlic (minced, or 1/2 teaspoon garlic powder)
  • 1 tablespoon olive oil
  • 1 tablespoon red curry paste
  • 1 tablespoon tomato paste
  • 1 cup coconut milk (from a small carton or half a standard can)
  • 1/2 cup vegetable broth (about half a vegetable bouillon cube dissolved in water works fine)
  • 1 tablespoon soy sauce
  • salt (to taste)
  • 1 cup white rice (cooked, for serving — optional)

Method

  1. Place the potatoes and carrots in a medium saucepan, cover with cold water, and bring to a boil. Cook for 10 minutes, until just barely tender when pierced with a fork — they should not be fully soft yet. Drain and set aside.
