Copycat Raising Cane’s Sauce

The pepper is the part most copycat versions get wrong. It’s not a pinch, it’s a full teaspoon of coarse black pepper, and you should be able to see the flecks in the sauce. That peppery bite is what keeps it from tasting like plain ketchup and mayo stirred together, which, to be fair, is mostly what it is.

The other thing is time. Stir it together and taste it right away, and it’s fine. Leave it in the fridge overnight, and it turns into something different: smoother, a little tangier, with the garlic and Worcestershire mellowed out into the background. I make it the day before whenever I’m frying chicken. It’s also great on burgers and grilled cheese, and it keeps for about a week in a jar.

Ingredients
  

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 teaspoon coarsely ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce
  • 1 pinch salt

Equipment

  • Whisk or spoon
  • Jar with a lid

Method

  1. Put the mayonnaise and ketchup in a small bowl and whisk until completely smooth, with no streaks.

  2. Add the black pepper, garlic powder, Worcestershire sauce and salt, and whisk again until evenly mixed. You should see plenty of pepper flecks.

  3. Taste and add a little more pepper if you want more bite. Keep in mind the flavor gets stronger as it sits.
  4. Spoon the sauce into a jar, cover and refrigerate for at least 4 hours, and ideally overnight, so the flavors blend.
  5. Stir before serving and use as a dip for chicken tenders, fries or onion rings. Keep leftovers covered in the fridge for up to a week.
