Low Histamine Blueberry Pancakes
Low heat. That’s the whole secret, and it’s the one I kept ignoring. Ricotta pancakes are softer than regular ones and they brown fast, so if the pan’s too hot they burn outside before the middle sets. Medium-low, a light brush of oil, and give each one two full minutes before you even look at flipping it.
The batter is ricotta, eggs, oat milk and oat flour, sweetened with a spoonful of maple syrup. Fresh blueberries only. Frozen ones bleed purple streaks through everything and make the batter watery. I fold them in at the very end, gently. We eat these with coconut yogurt and more berries on top, right off the skillet, because they don’t reheat well.
Low histamine blueberry pancakes made with ricotta and oat flour, lightly sweetened with maple syrup. They're tender and a little custardy in the middle, with golden edges. The batter comes together in one bowl in about ten minutes, so they work fine on a busy weekday morning.

Method
- Combine the ricotta, eggs, oat milk, maple syrup, and vanilla extract in a large bowl. Whisk until the mixture is smooth and the ricotta is fully incorporated with no visible lumps.1 cup fresh ricotta, 2 large eggs, 1/2 cup oat milk, 1 tbsp maple syrup, 1 tsp vanilla extract, maple syrup
- Add the oat flour, baking powder (if using), and salt to the bowl. Stir with a spatula until just combined — stop as soon as no dry streaks remain. A few small lumps are fine; overmixing toughens the pancakes.1 3/4 cups oat flour, 2 tsp baking powder, 1 pinch salt
- Scatter the fresh blueberries over the batter and fold them in gently with a spatula, using just two or three wide strokes so they stay whole and don't bleed into the batter.1/2 cup fresh blueberries, fresh blueberries
- Place a non-stick skillet or griddle over medium-low heat. Brush lightly with olive oil or coconut oil, then let the pan warm for about one minute before adding any batter — a properly heated skillet prevents sticking and promotes even browning.1 tbsp olive oil or coconut oil, coconut yogurt
- Scoop a scant 1/4 cup of batter per pancake onto the skillet. Cook for 2 to 3 minutes, until bubbles break across the surface and the edges look set. Flip once and cook for another 2 to 3 minutes, until both sides are lightly golden. Work in batches, re-oiling the pan as needed.
- Stack the pancakes while still warm and top with a spoonful of coconut yogurt, a handful of fresh blueberries, and a light drizzle of maple syrup.

Notes
Use fresh blueberries every time — frozen ones release too much moisture and make the batter watery. These pancakes are best eaten right away; the texture softens considerably if stored and reheated.
