Homemade Turkey Skewers with Roasted Potatoes, freshly made and ready to serve

Turkey Skewers with Roasted Potatoes

Maple and herbs do most of the work here. A short marinade pulls the flavor deep into the turkey, and the air fryer or oven gives you lightly charred edges without any fuss. The sweet potato wedges roast alongside until the outside crisps and the inside stays soft.

The creamy dip is the quiet surprise — coconut yogurt and cooked egg yolks blend into something rich and smooth without a drop of mayonnaise. This is a low-histamine friendly dinner built around fresh ingredients, so it fits a lot of diets without feeling like a compromise. Plate it over mixed greens and it is a complete, colorful meal.

Method

  1. Cut the turkey breast into large, even cubes and place them in a bowl. Add the olive oil, maple syrup, thyme, oregano, sweet paprika, garlic powder (if using), sea salt, and black pepper (if using). Toss until every piece is fully coated, then cover and let the turkey marinate for 20 to 30 minutes at room temperature.
1 lb fresh turkey breast, 1 tbsp olive oil, 1 tbsp maple syrup, 1 tsp dried thyme, 1 tsp dried oregano, 1/2 tsp sweet paprika, garlic powder, sea salt, black pepper, 1 large sweet potato, 1 tbsp olive oil, sea salt, sweet paprika, 1/2 tsp garlic powder, sea salt, olive oil
  2. Preheat the oven to 400°F. Arrange the sweet potato wedges on a baking sheet in a single layer. Drizzle with olive oil, then season with sea salt, dried parsley, and sweet paprika (if using). Toss to coat and roast for 25 to 30 minutes, flipping once halfway through, until the edges are crispy and the centers are tender.
dried parsley, 1 tsp fresh parsley
  3. Thread the marinated turkey cubes onto skewers, packing them snugly without overcrowding. Cook in an air fryer at 390°F for 12 to 15 minutes, turning the skewers halfway through, until the turkey is cooked through and lightly charred at the edges. Alternatively, roast on a lined baking sheet in an oven set to 390°F for the same duration.
    2 cooked egg yolks
  4. Place the cooked egg yolks in a small bowl and mash them thoroughly with a fork until no large lumps remain. Stir in the coconut yogurt, garlic powder (if using), dill, parsley, and sea salt. Mix until the dip is smooth and creamy. Add a small splash of water and stir again if you want a looser consistency.
3 tbsp unsweetened coconut yogurt, 1 tsp fresh dill, water
  5. Spread a handful of mixed greens on each plate and drizzle lightly with olive oil. Lay the turkey skewers alongside the roasted sweet potato wedges, then spoon the creamy herb dip into a small bowl or directly onto the plate. Scatter pumpkin seeds over the greens if using, and serve right away.

Notes

Always use fresh (never leftover) turkey for the best low-histamine results. Omit any optional spice that does not suit your tolerance and lean on extra dill and parsley for flavor.
